Glazed Carrots are most delicious when roasted in an easy and delicious cola glaze. In this case, I used Cheerwine, a North Carolina staple, but regular cola would be just as delicious.

Ingredients

  • 1 pound carrots
  • 1 cup packed brown sugar
  • 3/4 cup cola beverage

Instructions

  1. Preheat oven to 400°F
  2. Peel the carrots and cut into 2-inch pieces.
  3. In a mixing bowl, whisk together the brown sugar and cola.
  4. Place carrots in a baking dish and pour the glaze on top of the carrots.
  5. Roast for 40 minutes.
  6. Remove from oven and drain the carrots.
  7. Serve immediately.
