There are few things that bring me more comfort than a grilled cheese sandwich. Who can resist melted cheesy bread? In the past few years I set out on a hunt for the best grilled cheese sandwich in New York City. Sadly, my two most favorite grilled cheese sandwiches were on the menus of the now defunct restaurants Artisanal Bistro and The Spotted Pig.

However, despite my love for all things grilled cheese, sometimes I like to spend a month or two going dairy free but I still crave a sandwich that’s hearty and comforting. Enter in the Grilled Cucumber and Hummus Sandwich. It’s a sandwich with only three ingredients.
