Vegan Cauliflower Alfredo

Yield: 4 servings
Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes

This cauliflower alfredo is so delicious you won't miss all the heavy cream and cheese! Ready in less than 30 minutes.

Ingredients

  • 12 ounces fettuccine noodles
  • 1 tablespoon olive oil
  • 3 1/2 cups chopped cauliflower
  • 1/2 large white onion, loosely chopped
  • 1-2 cloves garlic
  • 2 cups water
  • 1 tablespoon nutrtional yeast
  • 1/2 teaspoon salt

Instructions

  1. Cook the fettuccine according to package directions.
  2. Heat the oil over meduim high heat in a large skillet.
  3. Add the cauliflower and onion. Cover the pan with a lid and cook until tender, 5 to 7 minutes.
  4. Add the water and continue to simmer until the veggies are soft, about 10 minutes.
  5. Drain the cauliflower mix, reserving the liquid.
  6. Add the cauliflower mix to a blender and add the nutrional yeast and the salt.
  7. Blend the cauliflwer mix, adding one tablespoon of the reserved water at a time until desired consistency is reached.
  8. Garnish with chopped parsley if desired.
