Ingredients

  • 1 bunch of asparagus spears
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • Cooking spray

For the garlic aioli:

  • 1 cup mayonnaise
  • 2-3 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

    1. Preheat your oven to 425°F (220°C)
    2. Wash and trim the tough ends of the asparagus spears.
    3. In a shallow dish, mix together the breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and black pepper.
    4. In another dish, beat the eggs.
    5. Dip each asparagus spear into the beaten eggs, ensuring it's well coated.
    6. Roll the asparagus spear in the breadcrumb mixture, pressing the breadcrumbs onto the asparagus to adhere.
    7. Place the coated asparagus spears on a baking sheet lined with parchment paper.
    8. Lightly spray the coated asparagus with cooking spray to help them crisp up in the oven.
    9. Bake in the preheated oven for about 12-15 minutes or until golden brown and crispy.
    10. While the fries are baking, mix all the ingredients of the garlic aioli and set aside.
    11. Serve the baked asparagus fries with the garlic aioli.
