Simplied and easy Eggplant Parmesan is a hearty and satisfying dish that pairs well with pasta or a simple salad. It's a classic Italian comfort food that many people enjoy.

Ingredients

  • 2 large eggplants
  • 2-3 eggs
  • 2 cups breadcrumbs
  • 2 cups marinara sauce (store-bought or homemade)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves for garnish (optional)

Instructions

    1. Preheat your oven to 375°F (190°C).
    2. Slice the eggplants into 1/2-inch thick rounds. You can peel them if you like or leave the skin on.
    3. In a shallow dish, whisk 2-3 eggs.
    4. In another shallow dish, place breadcrumbs for coating.
    5. Dip each eggplant slice into the beaten eggs, allowing any excess to drip off.
    6. Coat the eggplant slice with breadcrumbs, pressing them on gently to adhere.
    7. Spread a thin layer of marinara sauce on the bottom of a baking dish.
    8. Place a layer of the breaded eggplant slices on top of the sauce.
    9. Sprinkle a layer of mozzarella and Parmesan cheese over the eggplant.
    10. Repeat the layers until you've used up all the ingredients, finishing with a layer of cheese on top.
    11. Cover the baking dish with aluminum foil and bake for about 25-30 minutes, or until the cheese is bubbly and golden.
    12. Garnish with fresh basil leaves if desired.
