Pumpkin cheesecake is a delightful dessert that combines the creamy richness of cheesecake with the warm, earthy flavors of pumpkin.

Ingredients

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted

For the filling:

  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup canned pumpkin puree
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger

For the topping:

  • 1 cup sour cream
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon vanilla extract
  • cinnamon, for sprinkling

Instructions

    Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.

    In a medium bowl, mix together the graham cracker crumbs, 1/4 cup sugar, and 1/2 teaspoon cinnamon. Stir in the melted butter until well combined. Press the mixture into the bottom of the prepared springform pan. Set aside.

    In a large mixing bowl, beat the cream cheese, 1 cup sugar, and 1 teaspoon vanilla extract until smooth and creamy. Add the eggs one at a time, beating well after each addition.

    In a separate bowl, combine the pumpkin puree, 1 teaspoon cinnamon, nutmeg, cloves, and ginger. Mix well.

    Pour the filling over the prepared crust in the springform pan. Smooth the top with a spatula.

    Bake in the preheated oven for 55-60 minutes, or until the center is set.

    While the cheesecake is baking, prepare the topping by mixing together the sour cream, 2 tablespoons sugar, and 1/2 teaspoon vanilla extract.

    After the cheesecake has finished baking, remove it from the oven and spread the sour cream topping evenly over the surface.

    Return the cheesecake to the oven and bake for an additional 5 minutes.

    Remove the cheesecake from the oven and allow it to cool completely. Once cooled, refrigerate for at least 4 hours or overnight before serving.
