Ingredients

  • 1 large sweet potato, peeled and diced into small cubes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • Olive oil or cooking spray for cooking
  • Cilantro, chopped for garnish

Instructions

    1. Preheat your oven to 400°F (200°C).
    2. In a large skillet, heat some olive oil over medium heat. Add the diced sweet potato and cook for about 8-10 minutes or until they are tender and lightly browned. Stir occasionally to prevent sticking.
    3. Add the diced onion and minced garlic to the skillet with the sweet potatoes. Cook for an additional 2-3 minutes until the onions are softened.
