Ingredients

  • 2 medium-sized sweet potatoes, peeled and sliced into thin strips
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, thinly sliced
  • 3 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 flour or corn tortillas
  • Optional toppings: guacamole, salsa, shredded cheese, sour cream, cilantro

Instructions

    1. Preheat the oven to 400°F (200°C).
    2. In a large bowl, combine the sweet potato strips, sliced bell peppers, and onion.
    3. In a small bowl, mix together the olive oil, cumin, chili powder, smoked paprika, garlic powder, salt, and pepper. Pour this mixture over the vegetables and toss until the vegetables are well coated.
    4. Spread the seasoned vegetables in a single layer on a baking sheet.
    5. Roast in the preheated oven for about 20-25 minutes or until the sweet potatoes are tender, stirring halfway through to ensure even cooking.
