  • 2 pounds Potatoes (Russet or Yukon Gold work well)
  • 2 tablespoons olive oil
  • Salt and pepper
  • Optional seasonings (such as paprika, Old Bay seasoning, minced parsley)

Instructions

    1. Preheat your oven to 425°F (220°C).
    2. Wash the potatoes, leaving the skin on.
    3. Cut the potatoes into thin, uniform strips.
    4. Rinse the potato strips in cold water and pat them dry with paper towels to remove excess moisture. This will help them become crispy in the oven.
    5. Place the potato strips in a large bowl, drizzle with a couple of tablespoons of olive oil, and toss to coat evenly.
