This creamy mushroom pasta makes for a wonderful and satisfying meal that's perfect for a cozy dinner at home.

Ingredients

  • 8 oz (about 2 cups) of your favorite pasta (e.g., fettuccine, linguine, or penne)
  • 8 oz of mushrooms (such as cremini or white mushrooms), sliced
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 3 cloves of garlic, minced
  • 1/2 cup vegetable broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

    1. Cook the pasta: Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until it's al dente. Drain and set aside.
    2. Sauté the mushrooms: In a large skillet, heat the butter and olive oil over medium-high heat. Add the sliced mushrooms and cook for about 5-7 minutes or until they are browned and have released their moisture. Season with salt and pepper to taste. Remove the mushrooms from the skillet and set them aside.
    3. Prepare the creamy sauce: In the same skillet, add minced garlic and sauté for about 1-2 minutes until fragrant. Pour in the vegetable broth and bring it to a simmer. Allow it to reduce by half, which should take about 5 minutes.
    4. Stir in the heavy cream and grated Parmesan cheese. Cook for an additional 2-3 minutes until the sauce thickens and the cheese is fully melted. If the sauce becomes too thick, you can add a little more cream or broth to reach your desired consistency.
    5. Return the cooked mushrooms to the skillet and stir them into the sauce. Allow everything to heat through for a few minutes.
    6. Combine the pasta and sauce: Add the cooked pasta to the skillet with the mushroom cream sauce. Toss everything together until the pasta is well coated with the sauce.
    7. Serve: Garnish your creamy mushroom pasta with freshly chopped parsley and additional grated Parmesan cheese, if desired. Serve hot, and enjoy!
