Sweet potato biscuits are a delightful and slightly sweet twist on traditional biscuits, adding the natural sweetness and vibrant color of sweet potatoes to the classic biscuit recipe.

Ingredients

  • 1 cup mashed sweet potatoes (cooked and cooled)
  • 2 1/4 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup cold butter (1 stick), cut into small cubes
  • 2-3 tablespoons granulated sugar (adjust to taste)
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract

For the honey butter:

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/4 cup honey

Instructions

    1. In a mixing bowl, allow the butter to soften at room temperature until it's easily spreadable. This usually takes about 30 minutes to an hour
    2. In a large pot, add enough water to cover the sweet potatoes.
    3. Boil the sweet potatoes until they are soft, about 15 minutes. Once they're cooked, mash them with a potato masher, then set them aside to cool.
    4. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
    5. In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.
    6. Add the cold butter cubes to the dry ingredients. You can use a pastry cutter, fork, or your fingers to work the butter into the dry mixture until it resembles coarse crumbs.
    7. In a separate bowl, combine the mashed sweet potatoes, buttermilk, and vanilla extract.
    8. Make a well in the center of the dry ingredients and pour the sweet potato mixture into it.
    9. Stir the mixture until it comes together into a soft, slightly sticky dough. If the dough is too wet, you can add a bit more flour. If it's too dry, add a bit more buttermilk.
    10. Turn the dough out onto a lightly floured surface and gently knead it a few times until it's smooth.
    11. Roll the dough to about 1/2 to 3/4 inch thickness.
    12. Use a biscuit cutter or a round glass to cut out biscuits. Place them on the prepared baking sheet, leaving a little space between each.
    13. Bake in the preheated oven for about 12-15 minutes, or until the biscuits are golden brown and cooked through.
    14. As the biscuits are baking, make the honey butter: Once the butter is softened, add the honey to the bowl.
    15. Use a spatula to combine the softened butter and honey thoroughly.
    16. Continue to mix until the honey and butter are well incorporated and the mixture is smooth and creamy. The consistency should be spreadable.
    17. Remove the sweet potato biscuits from the oven and let them cool on a wire rack for a few minutes before serving with the honey butter.
