Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup bran flakes
  • 1/2 cup brown sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 1/2 cups grated carrots (about 2-3 medium carrots)
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup raisins or dried cranberries (optional)

Instructions

    1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
    2. In a large mixing bowl, combine the flour, bran flakes, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. Mix them together until well combined.
    3. In another bowl, beat the eggs, and then add the vegetable oil, milk, and vanilla extract. Stir until well combined.
    4. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.
    5. Fold in the grated carrots and any optional ingredients like chopped nuts or raisins/dried cranberries.
    6. Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.
    7. Bake in the preheated oven for about 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
    8. Remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
