Ingredients

For the sweet potatoes:

  • 4 medium-sized sweet potatoes, peeled and cubed
  • 1/4 cup coconut milk (or any plant-based milk of your choice)
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Salt, to taste

For the topping:

  • 1 cup rolled oats
  • 1/2 cup chopped pecans or walnuts
  • 1/4 cup brown sugar or coconut sugar
  • 2 tablespoons coconut oil, melted
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Boil or steam the sweet potato cubes until they are fork-tender, about 10-15 minutes.
  3. Drain the sweet potatoes and transfer them to a large mixing bowl.
  4. Mash the sweet potatoes until smooth. Then, add in the coconut milk, maple syrup, vanilla extract, cinnamon, nutmeg, and salt. Mix until well combined.
